Lime-Garlic Chicken With Rice |

From Betty Crocker. Ingredients:
1 1/4 lbs bone-in skinless chicken thighs |
1/4 cup fresh lime juice |
1 1/2 cups chicken broth |
2 -3 garlic cloves, minced |
1/2 teaspoon dried thyme |
1/4 teaspoon pepper |
2 tablespoons butter or 2 tablespoons margarine |
1 cup uncooked instant rice |
Directions:
1. Place chicken in a 4-quart slow cooker; add in the next 6 ingredients. 2. Cover and cook on LOW for 8-10 hours; during the last 15 minutes, stir in the rice. 3. Remove chicken from slow cooker; place cooked rice on each individual plate. 4. Top with chicken; spoon any remaining juices over chicken. |
