A delicious summer cool-down. Light and refreshing. Ingredients:
1/2 cup rum-or to taste |
1 package instant lemon pudding |
1 package lime gelatin |
2 1/2 cups water |
1/3 cup sugar |
2 eggs-lightly beaten |
1 8oz tub whipped topping |
1 9 ready-made graham cracker crust |
1 lime-thinly sliced. |
Directions:
1. Mix pudding,gelatin,and sugar in a saucepan. 2. Stir in 1/2 cup water and eggs. Blend well. 3. Add remaining water. Turn stove on to medium heat and stir until mixture comes to a boil. 4. Remove from heat and stir in rum. Cool slightly. 5. Transfer mixture to a bowl and chill for about 1 1/2 hours or until completely cold. 6. Fold in whipped topping then spoon into crust. 7. Chill for another 2 hours or until firm. 8. Garnish with lime slices. |
