Women's Weekly Quick Mix Biscuits and Slices. Ingredients:
185 g butter |
1 teaspoon coconut essence |
2 teaspoons grated lime rind |
1/3 cup caster sugar |
1 1/2 cups plain flour |
1/4 cup rice flour |
1/3 cup shredded coconut |
Directions:
1. Beat butter, sugar, essence and rind in a medium bowl with electric mixer until smooth. 2. Stir in fours and coconut in two batches; knead lightly. 3. Roll dough between sheets of baking paper until 4mm thick; cut into 6cm shapes, place 3cm apart on greased oven trays. 4. Bake in moderate oven 10 minutes or until firm. 5. Stand 3 minutes before lifting onto wire racks to cool. |
