This recipe makes some of the best chicken tacos I have ever tasted. Not quite authentic, but VERY close to what you find South of the border. The lime isn't overpowering, but gives the chicken just enough kick to make this a dish take off. Read more . You will really ejnoy this one. I promise. Ingredients:
1/8 cup red wine vinegar |
1 1/2 lbs skinless-boneless and cubed chicken breast |
8 6 flour tortillas |
1/2 tsp ground black pepper |
1/2 juiced lime |
1 teaspoon white sugar |
1/4 cup salsa |
2 minced cloves garlic |
1/2 tsp salt |
1/4 cup shredded monterey jack |
2 chopped green onions |
1 tsp dried oregano |
1/4 cup shredded lettuce |
1 tomato, diced |
Directions:
1. Sauté the chicken in a medium-sized saucepan on medium-high heat for approximately 20 minutes. Add the lime juice, vinegar, salt, sugar, pepper, green onion, oregano and garlic. Simmer for an another 10 minutes. 2. Heat up an iron skillet (frying pan) over medium heat. Place one tortilla in the skillet and warm it on both sides. Do this to all the tortillas.
