A carrot dish with a fresh lime taste. Very easy and simple. Ingredients:
8 x baby carrots, scrubbed and thinly sliced |
1 x large onion, sliced |
lime juice to taste |
salt |
1 x tbsp olive oil |
Directions:
1. Heat a saucepan at medium heat and add the olive oil 2. Fry the sliced onions for a minute or two 3. Add the sliced carrots 4. Add the lime juice and a bit of salt 5. Cover and leave for about 3-4 minutes 6. Take off lid and taste. Adjust if necessary 7. Fry another minute or two uncovered and place in serving dish 8. Garnish with fresh parsley |
