Easy recipe. I'll have to try it.
Ingredients:
2 cups barley
6 cups water
1/4 cup olive oil
1 lime, juice of
salt and pepper
Directions:
1. Rince the barley and drain.
2. Boil water in a casserole and add the barley.
3. Cover and cook 1 hour at low heat or until barley is tender and water is absorbed.
4. Add olive oil and lime juice. Salt and pepper if you want and serve.
