This is a quick and simple dessert to make for the last days of the summer before Fall weather sets in.. Ingredients:
1 package lime gelatin |
1 cup sugar |
1 1/4 cups boiling water |
1/3 cup lime juice |
1 can (1 cup) flaked coconut |
1 cup heavy cream, whipped |
1 small angel food cake, torn into pieces |
Directions:
1. Dissolve gelatin and sugar in boiling water. 2. Add juice and chill until thickened. 3. Fold in coconut and whipped cream. 4. Make layers of cake bits and gelatin mixture in 9 x 13 inch pan. 5. Chill over night and cut into squares. 6. Serves 12 |
