Lime-cilantro tofu. Serve with brown rice. Ingredients:
1/4 cup chopped cilantro |
3 cloves garlic, minced |
1 lime, zested and juiced |
1 1/2 teaspoons soy sauce |
1 teaspoon ground cumin |
1/2 teaspoon brown sugar |
1/2 teaspoon cayenne pepper |
1 (12 ounce) package firm tofu, drained and cubed |
1 tablespoon olive oil, or more if needed |
Directions:
1. Mix cilantro, garlic, lime zest and juice, soy sauce, cumin, brown sugar, and cayenne pepper in a bowl. Add tofu and marinate in refrigerator for 1 hour to overnight. Remove tofu with a slotted spoon. 2. Heat olive oil in a skillet over medium heat; cook and stir marinated tofu until browned on all sides, 10 to 15 minutes. |
