Ingredients:
1 tablespoon olive oil |
1 onion, finely chopped |
4 cloves garlic, minced |
1/4 teaspoon hot pepper flakes |
1 (28 ounce) can diced tomatoes |
4 cups vegetable stock |
1 lb frozen lima beans |
2 tablespoons chopped fresh parsley |
1/4 teaspoon salt |
1/4 cup grated romano cheese or 1/4 cup parmesan cheese |
Directions:
1. In a stock pot heat first 4 ingredients for 5 minutes. 2. Add the tomatoes, stock and beans. 3. Bring to a boil. 4. Cover and reduce heat to medium-low for 10 minutes. 5. Add the parsley and salt. 6. Spinkle grated cheese on top. |
