Lima Bean Soup With Tomato |

A delicious, hearty soup. Ingredients:
20 ounces baby lima beans, cooked and drained |
2 tablespoons onions, chopped |
1/4 teaspoon fresh thyme, chopped or 1/8 teaspoon dried thyme, crushed |
1 medium garlic clove, minced |
2 tablespoons butter |
14 ounces chicken broth |
14 ounces beef broth |
1 cup tomato, diced (can be from a can) |
Directions:
1. Mash about 2 cups of the lima beans with a fork and set aside. 2. In a saucepan, saute onion, thyme, and garlic in butter until tender, about 5 to 7 minutes. Add mashed lima beans, whole lima beans, broths, and tomato. Simmer a few minutes to heat through and serve. |
