Lima Bean Soup with Pasta |

Delicious-even for those who don't like lima beans! Not too heavy. Ingredients:
500 grams dry lima beans |
2 cups celery, finely chopped |
1 1/2 cup carrots, finely chopped |
1 cup onion, finely chopped |
3 tbsp vegetable oil |
4 tbsp all-purpose flour |
6 cups water |
28 ounce diced tomatoes |
2 tsp basil |
1 tsp salt |
1/2 tsp pepper |
110 grams whole wheat pasta(approx 1 cup) |
Directions:
1. In large pan, cook celery, carrots and onion in oil until soft. Add flour; cook and stir for 1 minute. Gradually add water, stirring until smooth. 2. Add beans and remaining ingredients; bring to a boil. Reduce heat; simmer for 20 to 25 minutes or until slightly thickened. |
