This is from one of my co-workers. Just thought I would share because they sound fun. He swears that everyone in his family eats these every Christmas. Ingredients:
2 large sweet potatoes |
1/4 pound butter |
2/3 cup tequila |
1/4 cup fresh squeezed lime juice |
3 tablespoons granulated sugar |
Directions:
1. Cut the sweet potatoes into pieces about 1 inch long and 1/4 inch thick. 2. Melt butter in an iron skillet 3. Saute the sweet potatoes in butter for 5 minutes. 4. Add the tequila, lime juice, and sugar. 5. Cook covered over moderate heat for 5 minutes. 6. Serve. |
