This is a Southern Living recipe. Start with frozen shoepeg corn, and the end result tastes like fresh creamed corn. This is wonderfully sweet.
Ingredients:
3-16 ounce packages frozen shoepeg white corn, *partially thawed
1 stick unsalted butter
1 cup milk
1 cup half and half
1-1/2 to 2 teaspoons salt
1/2 teaspoon black pepper
Directions:
1. Place one of the packages of corn in a food processor
2. Process until smooth, stopping now and then to scrape down the sides
3. Melt butter in large skillet over medium heat
4. Stir in the pureed corn, the remaining 2 packages of corn, milk, salt, and pepper
5. Bring mixture just to boil, stirring constantly
6. Reduce heat, and simmer about 20-25 minutes or until liquid is absorbed
7. Stir often
8. IF YOU PREFER IT A LITTLE SWEETER, YOU MAY ADD A LITTLE SUGAR TO TASTE
