Here's my go-to recipe for an easy, but awesome salsa. I tried to write it down as best as I can (since I'm not normally a recipe-girl). Ingredients:
3 (12 ounce) cans rotel |
1 cup sweet pepper, seeded and coarsely chopped |
1 cup cilantro |
2 -3 cloves garlic or 2 teaspoons garlic powder |
1 teaspoon cumin |
2 teaspoons salt |
Directions:
1. Drain two cans of the Rotel. Dump all three cans into blender (2 drained, 1 not drained). Add remaining ingredients. Pulse until desired consistency. 2. Tips:. 3. *Smoking or broiling the peppers adds a delicious flavor. Do that first, and then seed them. 4. *Sometimes I throw in cherry tomatoes if I have them and need to use them up. 5. *I buy cilantro by the bunch. I cut them off where they are bound, and then wash them. I then take half the bunch and throw the whole thing into the blender. 6. *If I have lime, I'll squeeze half of a small lime into the salsa as well. |
