Lightly Curried Chicken Burgers |

This recipe marries the ever popular burger with a bit of curry and the sweet tartness of mango chutney. For a change, serve on/in a pita. Can be barbecued or pan-fried. The recipe comes from Chatelaine magazine. Ingredients:
2 tablespoons mango chutney (finely chopped if chunky) |
1 tablespoon vegetable oil |
2 teaspoons curry powder |
1/2 teaspoon salt |
1 lb ground chicken (or turkey) |
1/4 cup fresh coriander, chopped |
Directions:
1. Oil grill and preheat bbq to medium . 2. Mix chutney, oil, curry powder and salt in a large bowl. Crumble in the chicken. 3. Sprinkle with coriander and gently mix together with your hands or a fork. 4. Shape into 4 burgers. Make a depression in the middle of each burger, with your thumb, so they don't puff up . 5. Place on grill and barbecue with the lid closed until cooked through. This usually takes 5-8 minutes per side. 6. Serve on buns or pitas. 7. Alternately, pan fry over medium heat in an oil-coated, covered skillet 5-6 minutes per side. They should be brown & firm to the touch. (you may have to lower your heat to med-low, if they brown too quickly). |
