Lighter Pumpkin Chocolate Chip Cookies |

My version of a recipe from Light and Tasty. Ingredients:
1 cup smart balance butter spread |
1/2 cup brown sugar, packed |
1/2 cup granulated sugar |
1/4 cup egg substitute |
1 teaspoon vanilla extract |
1 cup flour |
1 cup whole wheat flour |
1 cup oatmeal |
1 teaspoon baking soda |
1/2 teaspoon salt |
1 teaspoon cinnamon |
1 cup pumpkin |
3/4 cup mini chocolate chip |
Directions:
1. In a mixing bowl cream together butter and sugars. Add egg and vanilla, beat to mix. 2. In another bowl mix flours, oatmeal, soda, salt, and cinnamon. 3. Add flour mixture to sugar mixture slowly, alternating with adding pumpkin. Mix well. 4. Fold in chocolate chips. 5. Drop by tablespoonfuls onto greased cookie sheet. Bake at 350 for 12-13 minutes or until lightly browned. |
