This is an even lighter version of this recipe: /Light-Pumpkin-Chip-Muffins-258925 Ingredients:
2 eggs |
1 egg white |
1/4 cup oil |
1 cup unsweetened applesauce |
1 (16 ounce) can pumpkin |
1/2 cup sugar |
1 cup all-purpose flour |
2 cups white whole wheat flour |
2 teaspoons baking soda |
2 teaspoons baking powder |
2 teaspoons pumpkin pie spice |
1 teaspoon salt |
8 ounces semi-sweet chocolate chips |
1/4 cup oats |
Directions:
1. 1. Mix first 5 ingredients together, 2. 2. separately, mix dry ingredients. 3. 3. Blend the two mixutres, fold in chips. 4. 4. generoously fill 24 greased(non stick cooking spray) or paper-lined muffin cups. Sprinkle oats on top. 5. 4 Bake at 400 degrees F. for 16-20 minute. |
