Ingredients:
2 tablespoons dijon mustard |
4 thin whole-wheat sandwich rolls (such as pepperidge farm deli flats), halved horizontally |
4 ounces lean sliced ham |
4 ounces sliced turkey |
4 slices (1.5 oz. each) reduced-fat swiss cheese |
2 tablespoons canola oil |
1 tablespoon red wine vinegar |
1/4 teaspoon salt |
1/8 teaspoon pepper |
2 cups thinly shredded lettuce |
12 cherry tomatoes, quartered |
2 pepperoncini, cored, seeded, thinly sliced |
Directions:
1. Divide mustard among rolls and spread evenly; top with layers of ham, turkey and cheese. 2. In a large bowl, whisk oil, vinegar, salt and pepper until blended. Add lettuce, tomatoes and pepperoncini. Toss well and divide among sandwiches. Place top half of rolls on sandwiches. Cut in half, if desired, and serve. |
