I've had this recipe for a long time. I am not sure where it came from. All I know is that it fits the bill when I have a chocolate craving without a lot of calories. Ingredients:
5 egg whites |
1/2 cup granulated sugar |
1/2 teaspoon vanilla extract |
1/3 cup cake flour (you can use a-p flour) |
4 tablespoons unsweetened cocoa powder |
1 1/2 teaspoons icing sugar |
2/3 cup cool whip |
1 tablespoon chocolate syrup |
Directions:
1. Preheat oven to 300*. Line bottom of a 8 round cake pan with parchment paper. 2. In a medium bowl, beat the egg whites at medium speed until frothy. Slowly beat in the granulated sugar, 1 tablespoon at a time, until soft peaks form. Fold in vanilla. 3. Combine flour and 3 tablespoons cocoa powder in a small bowl. Sprinkle over beaten egg whites, half at a time, gently folding in until it is just absorbed. 4. Spoon into baking pan and smooth the top. Bake 30 minutes - until top springs back when lightly pressed. 5. Sprinkle icing sugar on a clean tea towel. Turn the cake out of the pan onto the towel & peel off the parchment paper. Cool completely. 6. TOPPING:. 7. Combine Cool Whip and chocolate syrup until blended. Spread over top & sides of cake. Sprinkle with remaining 1 tablespoon cocoa powder. |
