Lower fat and less sugar in a classic carrot cake with cream cheese frosting
Ingredients:
1 cup brown sugar
1/4 cup extra virgin olive oil
1/4 cup unsalted butter
1 cup walnuts (optional)
1 cup applesauce, unsweetened
2 eggs
4 oz egg whites
2 1/4 cups whole wheat flour white
2 tsp baking soda
1 tsp salt
2 1/2 tsp cinnamon
1 tsp baking powder
4 cups carrot, raw grated
8 oz cream cheese, lite
1 cups powdered sugar, packed
1 tsp vanilla
Directions:
1. Cream brown sugar and oil
2. add eggs & whites and applesause
3. add carrot
4. In separate bowl combine flour, soda, salt, cinnamon, baking powder
5. add dry ingredients to moist and stir just enough to combine
6. bake in greased 13 x 9 pan at 350 for 40ish minutes (use toothpick to test for doneness after 30 minutes)
7. While baking, mix cream cheese, powdered sugar, and vanilla for frosting
8. Frost cooled cake
9. You could add 1 cup of raisins or nuts to the recipe if you want.
