All the pesto punch without the pesto pounds? It's a work in progress... Ingredients:
4 cups basil |
5 garlic cloves |
2 tablespoons parmesan cheese |
1/4 cup pine nuts |
1/8 cup olive oil |
1/8 cup lemon juice |
1/2 teaspoon salt |
1/8 teaspoon pepper |
Directions:
1. Toast the pine nuts in a dry skillet. Stir often to prevent burning. 2. Place all ingredients in a food processor and chop until smooth. Add cold water one tablespoon at a time if it gets too thick to continue blending. |
