Lightened Up Morning Glory Muffins |

I had some left over bananas I wanted to use up, some pineapple in the freezer, and thought muffins would be a great use. My hubby declared these some of the best that I've ever made! Ingredients:
2 c. flour |
3/4 c. sugar |
1 tsp. baking powder |
2 tsp. baking soda |
2 tsp. cinnamon |
1/2 tsp. salt |
2 eggs |
1/2 c. margarine, melted |
2 tsp. vanilla |
2 carrots, grated |
1 apple, peeled and grated |
1/2 c. coconut |
1/2 c. crushed pineapple |
2 ripe bananas, mashed |
1/2 c. dried cranberries |
Directions:
1. Stir dry ingredients together. 2. Whisk eggs with melted butter and vanilla 3. Stir into dry ingredients 4. Fold in remaining ingredients till just mixed 5. Spoon into lined muffin tins. Sprinkle tops with demerra sugar, if desired 6. Bake at 350 degrees 20 minutes, or until tests done |
