The traditional broccoli salad, lightened up a bit. Ingredients:
3 cups broccoli florets, small florette pieces |
1/2 cup light mayonnaise |
1/4 cup splenda sugar substitute |
2 tablespoons rice wine vinegar |
1/4 cup red onion, finely chopped |
3 tablespoons dried craisins |
2 tablespoons almonds, sliced |
3 tablespoons cheddar cheese, shredded |
Directions:
1. Wash fresh broccoli, cut into small bite-sized pieces. 2. Place in deep bowl. 3. Add onion, crasins and almonds; toss. 4. In separate bowl, blend mayo, Splenda & vinegar till smooth. 5. Pour over broccoli mixture, toss well until coated. 6. Sprinkle with cheese. 7. Chill for at least 2 hours for flavors to blend. |
