This is a much lighter version of a classic party favorite. While it's not as heavy as its traditional counterpart, it doesn't skimp on flavor. We serve this with tortilla chips but I have also served this as a sidedish. Ingredients:
2 boxes frozen chopped spinach, thawed and drained |
1 can artichoke hearts, drained and chopped |
2 t butter |
2 t flour |
1 c buttermilk, warmed in microwave |
1 c whole milk, warmed in microwave |
1 c good cheddar cheese, shredded |
1 c whole milk mozzarella cheese, shredded |
1 t garlic powder |
salt to taste |
pepper to taste |
1/3 c parmesan cheese |
Directions:
1. In a medium sized sauce pan, melt butter over medium heat. 2. Add flour and cook for 1-2 minutes. 3. Add the warmed whole milk and stir over heat until smooth. 4. Add the warmed buttermilk and stir over heat until mixture just comes to a boil. 5. Remove from heat and add cheeses, stir until all melted. 6. Mix in spinach and artichoke, garlic powder, salt and pepper. 7. Sprinkle top with Parmesan cheese. 8. Bake in 350* until bubbly. |
