Lighten up Creamy Raisin Rice Pudding |

This is a low fat version of a classic rice pudding and it tastes great. Ingredients:
3 1/2 cups 1% low-fat milk |
1 cup uncooked white rice |
1 (14 ounce) can fat-free sweetened condensed milk |
1/3 cup raisins |
1/4 teaspoon vanilla extract |
fat-free whipped topping (optional) |
ground cinnamon (optional) |
Directions:
1. Combine milk and rice, bring to a boil over medium heat. 2. Reduced heat to med/low and cover. Cook stirring occasionally until mixture is creamy and liquid is almost absorbed, about 25 minutes. 3. Stir in condensed milk, raisons and vanilla. 4. Cook stirring occasionally until thickened, about 10 minutes. 5. Remove from heat and let stand covered 10 minutes. 6. Top with whipped topping and cinnamon if you want. |
