Easy and awesome appetizer bursting with incredible flavors. My catering partner and I serve these at bridal and baby showers and it is always one of the first to go. Very impressive and more importantly very tasty. Read more . Enjoy
Ingredients:
1/2 cup frozen chopped spinach thawed and drained
1/3 cup soft whole-wheat bread crumbs
2 ounces sliced pimiento drained
2 tablespoons grated white onion
1 tablespoon chopped pecans
1 teaspoon lemon juice
1/4 teaspoon dried marjoram
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
4 flounder fillets at 4 ounces each
1/4 cup dry white wine
1 teaspoon grated lemon peel
Directions:
1. Combine first nine ingredients in medium bowl then stir well.
2. Spoon 3 tablespoons spinach mixture in center of each fillet.
3. Roll up jellyroll fashion beginning at narrow end then secure with a wooden pick.
4. Place rolls seam side down in a rectangular baking dish.
5. Combine wine and lemon rind then pour over rolls.
6. Cover with heavy duty plastic wrap and vent.
7. Microwave on high for 7 minutes then allow to stand one minute.
8. Remove and discard wooden picks then slice rolls and transfer to serving plates.
