Light Spicy Cornbread Muffins |

Very moist and tangy. Ingredients:
1 1/2 cups yellow cornmeal |
1 teaspoon baking soda |
1/2 teaspoon salt |
1 teaspoon sugar |
2 egg whites |
1/4 cup picante sauce |
3 tablespoons canola oil |
1 (8 ounce) carton plain nonfat yogurt |
cooking spray |
Directions:
1. Combine first 4 ingredients in a large bowl; make a well in center of mixture. 2. Combine egg whites and next 3 ingredients; add to dry ingredients, stirring just until moistened. 3. Spoon batter into muffin pans coated with cooking spray, filling two-thirds full. Bake at 425 for 18 to 20 minutes. Remove from pans immediately. |
