A lighter version of spinach & cheddar quiche Ingredients:
1 cup egg beaters |
1 1/4 cups skim milk |
1 tbsp dijon mustard |
1/4 tsp salt |
1/4 tsp pepper |
1/4 cup whole wheat flour |
1 cup whole wheat crackers, crushed |
1 cup cheddar cheese, shredded |
1/2 cup cherry tomatoes, cut in half |
1/2 cup spinach, chopped |
Directions:
1. Mix egg substitute, milk, mustard, salt, pepper, and flour 2. Add crackers and 3/4 cup cheddar cheese to mixture, then pour into pie dish 3. Distribute spinach and tomatoes so they are submerged in mixture, then top with remaining cheese 4. Bake at 350* for 30 minutes or until knife inserted comes out clean |
