Taken from the Light & Tasty Magazine. Ingredients:
8 ounces linguine, uncooked |
1 egg, lightly beaten |
1 cup fat-free evaporated milk |
1/4 cup red pepper, finely chopped |
1/8 teaspoon crushed red pepper flakes |
1/8 teaspoon pepper |
1/2 cup parmesan cheese, grated (divided) |
1/2 cup frozen peas, thawed |
2 slices bacon, cooked and crumbled |
Directions:
1. Cook linguine according to directions. 2. Meanwhile, in a small saucepan, combine the next 5 ingredients. 3. Cook and stir over medium-low heat until mixture reaches 160 degrees and coats the back of a metal spoon. 4. Stir in 1/4 cup of the parmesan cheese, the peas and the bacon; heat through. 5. Drain linguine; toss with sauce. 6. Sprinkle with the remaining parmesan cheese. 7. Serve immediately. |
