Light Healthy Mushroom and Spinach Leaf Risotto |

This was an adaptation of a Weight Watchers Recipe Ingredients:
175 g mushrooms |
1 garlic clove |
1 teaspoon olive oil |
1/2 onion, finely chopped |
1/2 cup arborio rice |
1 1/2 cups chicken stock |
1/2 cup fresh spinach leaves |
1 1/2 tablespoons parmesan cheese, grated |
1/2 lettuce leaf |
1/3 tomato |
1/2 cucumber |
1/2 carrot |
Directions:
1. Prepare salad. 2. Pan cook mushrooms & garlic until tender, use a little water to stop them sticking. 3. Fry onion in oil until cooked, add rice and 1/2 cup stock until absorbed. Keep adding stock 1/2 cup at a time stirring constantly until rice is soft. 4. Stir through mushroom and spinach until warmed through. 5. Serve with side salad. |
