Light Healthy Lentil Cottage Pie |

This was adapted from a Weight Watchers Recipe. Ingredients:
1/2 cup pasta sauce |
1/2 stick celery, finely sliced |
1/4 cup carrot, grated |
1/2 cup spinach, shredded |
1 cup cooked lentils |
1 garlic clove |
1 cup cauliflower |
100 g pumpkin, peeled and chopped |
1/2 lettuce leaf, for salad |
1/3 tomato, for salad |
1/2 cucumber, for salad |
1/2 carrot, for sald |
Directions:
1. Cook cauliflower and pumpkin. 2. Prepare salad. 3. Bring to boil pasta sauce with celery, carrot, spinach, lentils and garlic. 4. Reduce heat and simmer for 15 minutes. 5. Mash cauliflower and pumpkin. 6. Spoon lentil mixture into bowls and top with cauliflower/pumpkin. 7. Serve with salad. |
