Light Healthy Fried Rice With Bacon |

This was a recipe I modified from a Weight Watchers recipe. Ingredients:
1/2 onion |
1/2 red bell pepper (capsicum) |
2 bacon, middle bacon rashers fat trimmed & sliced |
1 garlic clove |
3/4 cup broccoli |
1/2 cup carrot |
3/4 cup cooked rice (0.25 cup raw makes up 0.75 cup cooked rice) |
2 teaspoons soy sauce |
1 tablespoon sweet chili sauce |
Directions:
1. Cook rice. 2. Chop broccoli and carrot to small chunks and cook. 3. Cook garlic, onion, capsicum and bacon in pan, using enough water to stop it sticking, if required. 4. Add vegetables, soy sauce and sweet chili sauce to pan and stir until warmed through. |
