Light Healthy Beef Capsicum Stir Fry |

This was modified from a Weight Watcher recipe which was originally for Pork. Ingredients:
1/2 red capsicum |
100 g green beans, chopped |
140 g beef, strips |
1/4 teaspoon dried ginger |
1 tablespoon hoisin sauce |
1 teaspoon soy sauce |
3/4 cup cooked rice (0.25 cup raw rice is 0.75 cup cooked rice) |
Directions:
1. Cook rice. 2. Cook capsicum and beans. 3. Stir Fry beef using enough water to stop it from sticking until browned. Stir in ginger, hoisin and soy. 4. Add beans and capsicum and stir until warm through. 5. Serve over rice. |
