A great light guacamole recipe Ingredients:
1 medium tomato (cored, seeded, and chopped) |
1 cup frozen lima beans |
1 hass avocado (pitted) |
3 tablespoons fresh lime juice |
2 tablespoons reduced-fat mayonnaise |
1/2 teaspoon salt |
1/4 cup cilantro (minced) |
1 medium jalapeno (stemmed, seeded, and minced) |
1 tablespoon shallot (minced) |
1 garlic clove (minced) |
1/2 teaspoon cumin |
1 pinch black pepper |
Directions:
1. Cook frozen lima beans, then rinse under cool water and dry (remove skins unless baby lima beans and you'd like to be creamier). 2. Process 1/4 an avocado, lima beans, lime juice, mayo, and 1/2 tsp salt in food processor. 3. Cube the rest of the avocado and stir together with the rest of the ingredients. Add salt and pepper to taste. 4. Let sit, tightly wrapped, in fridge for flavors to combine. |
