Use Belgian endive spears or other vegetables to dip into it Ingredients:
1 cup edamame, shelled |
1/4 cup low-fat mayonnaise |
1/4 cup low-fat plain yogurt |
2 teaspoons lemon juice |
1/2 teaspoon ground cumin |
1/2 teaspoon chili powder |
1 tablespoon coriander, coarsely chopped |
salt and pepper |
Directions:
1. Place edamame, mayonnaise, yogurt, lemon juice, cumin, chili powder and coriander in a food processor. 2. Add salt and pepper. 3. Process until smooth. 4. Adjust seasonings at this point. 5. Serve with Belgian endive spears or veggies. |
