Light Creamy Chicken and Broccoli Pasta |

This quick and easy meal has ground chicken, and light sour cream sauce, served over pasta. Ingredients:
8 ounces fettuccine pasta or 8 ounces any other pastas |
1 tablespoon butter |
1 lb ground chicken |
1 medium white onion, thinly sliced |
2 cups broccoli, chopped |
1 cup light sour cream |
4 green onions, thinly sliced |
1/2 teaspoon poultry seasoning |
1/4 teaspoon nutmeg |
1/2 cup parmesan cheese |
Directions:
1. Bring a large pot of salted water to a rolling boil, add pasta, boil, stirring often, for about 4 minutes. 2. Add Broccoli to boiling pasta, and cook another 4 minutes, or until pasta is soft, and broccoli is tender-crisp. 3. Meanwhile, melt the butter in a large frying pan, over medium heat. Add onion, saute 4 minutes. Crumble chicken into pan. Cook, stirring often, until no longer pink, 4-5 minutes. 4. Add the sour cream, green onions and seasonings and stir until hot. 5. Drain pasta, toss with sauce and sprinkle with parmesan cheese. |
