                    a lighter version of cornbread casserole with cream cheese. reduced the sugar and switched to neufchatel cheese Ingredients: 
                    
                        
                                                1 (8 ounce) package neufchatel cheese  |  
                                                1 large egg  |  
                                                1 (15 ounce) can corn (or creamed corn, i only have had corn on hand)  |  
                                                1 (8 1/2 ounce) package corn muffin mix (i use jiffy)  |  
                                                2 tablespoons butter  |  
                                                1/3 cup sugar  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. preheat oven to 350. melt butter and cheese together just enough to soften. 2. Mix together all of the ingredients & pour into a baking pan. 3. bake for about 40 minutes.                              |
