REVISED: Thanks for the feedback - I've made some adjustments - hope you all enjoy. This is a fluffier version of the popular coffee mug chocolate cake. When you are looking for a quick taste of chocolate - but want something lighter - this is the recipe for you! I make this as a quick snack or when you need a quick dessert - and the kids love making it themselves. Ingredients:
4 tablespoons all-purpose flour |
4 tablespoons white sugar |
2 tablespoons cocoa powder (dutch process, if available) |
1/4 teaspoon baking soda |
1/4 teaspoon baking powder |
1 egg |
3 tablespoons milk |
1/2 teaspoon lemon juice |
1 1/2 tablespoons oil |
1/2 teaspoon vanilla |
3 tablespoons chocolate chips (optional) |
1 tablespoon chopped nuts (optional) |
2 tablespoons chocolate syrup (optional) |
Directions:
1. Use one large coffee mug. 2. Combine dry ingredients in coffee mug. 3. Add egg, milk, lemon juice, oil & vanilla to cup - mix well. 4. Add any optional ingredients, if desired. 5. Place the coffee mug in the microwave and cook on high for 3 minutes. 6. As it cooks, the cake will rise above the cup but shouldn't make a mess (larger cups ensure this). 7. Cool a couple of minutes and enjoy! |
