Delicious light version of chicken parmesan Ingredients:
12 oz. skinless chicken breast (about 4 breasts) |
16 tomatoes, canned diced |
2 cloves garlic |
1 tsp basil |
1 tsp oregano |
1/2 tsp rosemary |
1/4 tsp salt |
1/4 tsp black pepper |
1/3 cup grated parmesan cheese |
1 tsp flour |
Directions:
1. Preheat oven to 425. 2. In a shallow baking dish, place chicken breasts, cut in half and sprinkle with 1 tbspf the parmesan cheese and the flour, and salt and pepper to taste. Bake for 15 minutes, or until starting to brown. 3. Meanwhile, in a saucepan, bring tomatoes, garlic and herbs to a boil. Simmer until slightly reduced. Season with salt and pepper. 4. Remove chicken from oven and pour sauce over top. Reduce temperature to 360. Bake 15 more minutes. 5. Remove chicken from oven and preheat broiler. Sprinkle remaining cheese on top and broil until bubbly. |
