A fat-free, flavour-full breakfast side you can make at home! Got this from a local B & B and love it! They served it with a huge fruit salad and a cup of tart yogurt. Ingredients:
1 large sweet onion, diced |
2 cloves garlic, minced |
4 medium red potatoes, scrubbed and chopped |
2/3 cup vegetable broth |
1 tbsp montreal steak spice seasoning (more, to taste) |
Directions:
1. Heat a large non-stick skillet over medium high heat. 2. Add the onion and a splash of water and cook 5 minutes, stirring occasionally and adding water as needed, until softened. 3. Add garlic, potatoes and another splash of water and cook 5 minutes more. 4. Add broth and steak spice, stirring well. 5. Cover and simmer 15-20 minutes, until potatoes are just tender. 6. Uncover and cook over high heat 5 minutes, until broth has evaporated. |
