Who doesn't love banana bread. I reduced this light version to save a few more calories. Ingredients:
1 cup canola oil |
1 1/2 cups splenda sugar blend for baking |
4 eggs, slightly beaten |
2 teaspoons banana extract |
2 teaspoons lemon juice |
2 cups mashed bananas (3 large bananas) |
1/2 teaspoon salt |
2 1/2 cups all-purpose flour |
2 teaspoons baking soda |
1/2 teaspoon baking powder |
1/2 cup walnuts, chopped |
Directions:
1. Preheat oven to 350 degrees. Blend oil and sugar substitute together in a large bowl. Add banana extract,lemon juice and eggs; beat well.Stir in mashed bananas and set aside. 2. Sift dry ingredients together and combine with banana mixture. Stir in chopped walnuts. Pour into a standard loaf pan coated with Pam with flour non-stick spray and bake for 50 minutes or until a toothpick inserted into the center comes out clean. Cool in pan. Cut into 16 pieces. |
