I wanted a recipe that was healthy and yummy - this was it! Any kind of berry will do; I used wild raspberries and they were delicious. Ingredients:
1 1/4 cups flour |
1/4 cup wheat germ (can substitute an additional 1/4 cup flour) |
1/2 cup brown sugar |
2 teaspoons baking powder |
1/2 teaspoon salt |
3/4 cup oatmeal |
2 teaspoons vanilla |
1/2 cup applesauce |
2 large eggs, slightly beaten |
3 large ripe bananas, mashed |
1 cup berries (if frozen, don't defrost) |
Directions:
1. Preheat oven to 350 degrees. 2. Combine dry ingredients. 3. Combine wet ingredients (except berries). 4. Mix together wet and dry ingredients. Do this in 8-10 strokes, don't overmix. If there are still bits of dry ingredients, it's okay! Add berries in last couple of strokes. 5. Fill greased muffin cups 3/4 full. 6. Bake for 18-20 minutes, or until an inserted toothpick comes out clean. 7. Enjoy! |
