light Amazing Coconut Pie |

I really like this recipe but it needed to be lightened up a bit. This is my version, more coconut flavor, more fiber, less fat and sugar than the old version. Ingredients:
1 1/2 cups nonfat milk |
1/4 cup sugar |
1/2 cup sugar-free coconut syrup (torani) |
1/2 cup whole wheat pastry flour |
1 teaspoon baking powder |
1/2 teaspoon salt |
3 eggs (large or extra large) |
1/4 cup butter, melted |
1 1/2 teaspoons vanilla |
1/4 teaspoon almond extract |
1 cup unsweetened coconut, toasted |
Directions:
1. Toast Coconut until golden brown. 2. Combine all of the ingredients, except the coconut, together in a blender. 3. Cover and blend on low speed for 3 minutes. 4. Pour into a greased 9-inch pie pan. 5. Let stand about 5 minutes then sprinkle with coconut. 6. Bake at 350 degrees for 40-45 minutes. 7. Serve warm or cool. 8. This tastes much better cooled over night! 9. Enjoy! |
