This is my mother-in-law's chocolate pie, adjusted for the fact that we can't eat like 20-year-olds any more. The original called for 1 cup of sugar and cooking in a double boiler. I use the Equal Spoonful and use the microwave. Ingredients:
2 egg yolks |
2 cups milk |
1 cup equal sugar substitute (equal spoonful) |
1/3 cup cocoa |
1/3 cup flour |
1/8 teaspoon salt |
1 tablespoon butter |
1/2 teaspoon vanilla |
9 inches baked pie crusts, cooled |
Directions:
1. Beat egg yolks, add milk. Beat. Sift together Equal Spoonful, cocoa, flour, and salt in a microwaveable bowl. Stir in about 1/3 of the milk mixture to make a smooth paste. Slowly stir in remaining milk/egg until smooth. 2. Microwave about 4 minutes, stopping every 30 to 60 seconds to stir, until thick. Add 1T butter and 1/2 t. vanilla, stir until butter melts. Pour into baked pie shell. Top with meringue if desired or lite whipped topping. Chill. |
