Not really a Spanish rice; just a rice dish made with onions, pork, and tomatoes. Very old canned farm recipe; most of their canned tomatoes weren't as juicy as ours are now. Libby calls ground pork 'pork hamburger'. I need to make this recipe to see cooking time and liquid amount from tomatoes for today's tastes. Ingredients:
2 onions |
1 tablespoon butter |
1 lb ground pork (pork hamburger) |
1/2 cup rice |
1 1/2 pints tomatoes, cooked |
Directions:
1. Fry onions in butter until brown. 2. Add ground pork (pork hamburger). 3. Fry until done. 4. Cook rice separately until done. 5. Mix tomatoes, rice, and pork hamburger; season to taste. 6. Put into a baking dish. 7. Bake 3/4 hour (no time was given). |
