My Mother-in-law's recipe. This is very simple but very rich. We eat this for lunch in the summer just by itself. This recipe is for people that don't like a fussy salad. Ingredients:
3 lbs potatoes, peeled, cooked and cut into pieces |
12 hard-boiled eggs, chopped |
1 onion, finely chopped |
1/2 cup mayonnaise |
1/2 cup sour cream |
1 teaspoon salt |
1 teaspoon pepper |
Directions:
1. Mix cooked potatoes, hard-boiled eggs, onion, mayonnaise, sour cream, salt and pepper together. 2. Chill. |
