Lo Carb Lo cal Lo Fat Vegan Comfort food. Ingredients:
1/4 cup tvp |
1 small onion |
1/2 bell pepper |
1/2 small carrot |
1/2 zuchinni |
1/2 cup canned tomatoes |
5 mushrooms |
1 cup spinach |
1 cup cauliflower |
1 tbl soy milk |
1 tbl soy sauce |
1/2 leek |
1 tbl kidney beans |
1 tsp garlic |
1 tbl balsamic vinegar |
Directions:
1. Boil cauliflower 2. Saute onion and garlic 3. Add pepper and zuchinni 4. Add soy sauce vinegar and mushies 5. Add tomatoes, kidney beans and spinach 6. simmer for 5 mins 7. When cauliflower cooked mash with soy milk add salt and pepper to taste 8. Layer veg mix into casserole dish 9. Top with cauli-mash 10. Sprinkle with paprika 11. Bake in oven 200 for 20mins |
