Lexington-Style Grilled Chicken |

This is from Southern Living May 2010. Full of flavor and so easy to do. The original recipe calls for 1/4 c of oil, but I changed it to be a little more health concious. I also used skinless bone in chicken breasts. Cheaper alternative to boneless skinless breasts. Ingredients:
2 cups cider vinegar |
1/4 cup dark brown sugar, firmly packed |
2 tablespoons vegetable oil |
3 tablespoons dry crushed red pepper |
4 teaspoons salt |
2 teaspoons pepper |
5 lbs chicken thighs, skinless bone-in |
Directions:
1. Stir together first 6 ingredients until blended. 2. Divide vinegar mixture and chicken between 2 large zip-top plastic freezer bags, and seal bags. Chill 2 to 8 hours, turning bags occasionally. 3. Preheat grill to 350° to 400° (medium-high) heat. Remove chicken from marinade, discarding marinade. 4. Grill chicken, covered with grill lid, 35 to 40 minutes or until done, turning occasionally. ** I turn off the two center burners for the last 15 mins or so. |
