This is a famous levantine recipe for a pepper and spice rub. Use it for legumes, eggplant recipes, but also for beef stew. Cooking time and preparation time are a guess. Ingredients:
3 tablespoons black pepper, corns |
2 tablespoons allspice, berries |
1 tablespoon cinnamon |
1 tablespoon paprika |
2 teaspoons nutmeg, ground |
Directions:
1. Seperately roas peppercorns and allspice berries. 2. Let cool and grind them finely. 3. Mix with the other powders and store in an airtight container. |
