Lettuce Chicken Roll Ups Ingredients:
32 oz chicken breast |
1 tbs. peanut butter |
1/4 c. peanuts, chopped |
1 tsp. crushed red pepper |
1/4 c. lime juice |
2 garlic cloves |
1 tbs. butter |
1 tbs. oil |
1/4 c. soy sauce |
2 c. cabbage, white |
2 c. cabbage, red |
4 carrots |
1 red bell pepper |
1 yellow bell pepper |
1 c. cilantro leaves |
2 heads lettuce, iceberg |
Directions:
1. Juice 4 Limes, place in zip lock bag. 2. Mince 2 cloves of garlic, place in zip lock. 3. Add soy sauce to zip lock bag. 4. Trim and cut up chicken in bite size pieces, and place in zip lock bag. Marinate in fridge at least 1 hr. 5. Slice all vegetables. 6. Drain chicken after marinating and reserve liquid. 7. Boil liquid, set aside. 8. Saute all veggies, except for cilantro in 1.5 tsp. of Oil. Set aside. 9. Saute chicken in balance of 1.5 tsp. of Oil. 10. Take the boiled marinade, add 1 Tbl. of Butter and 1 Tbs. Peanut Butter. Mix well. Add finished sauce to chicken. 11. Keep veggies separate. 12. Make roll ups using chicken, veggies and fresh cilantro. |
